Biking season is fast approaching and I am excited to be introducing these to my etsy shop very shortly!. Each cap is made with salvaged clothing and includes an elastic band on the back to ensure a snug and conformable fit. They are lightweight and each and everyone is made by hand in Seattle.

We went on a short road trip this weekend to pick out our pumpkins. We also picked up some green tomato's (I kind of fell in love with fried green tomato's recently), squash, and Brussels spouts! I'm excited to have a week full of baking, crocheting, reading and listening to the rain. We also went on an amazing hike, which I will post about later!

Camping at Lake Cushman

This past weekend we went on what will probably be our last camping trip of the year. We had a great time kayaking, eating smores, sitting by the lake, telling ghost stories(well, trying to at least) and hovering over a nice warm fire!
Here are a few of my favorite pictures!

This was the amazing view of the Olympic National Park we had while kayaking on Lake Cushman.

By morning the fog was so thick we could hardly see the other side of the lake! And Brr... it was freezing!

It definitely feels like the beginning of fall. It is now time to test this vegan Irish Coffee recipe and snuggle up with a good book!

Vegan Empanada Recipe!

These empanada's don't take long to make and the dough can even be made the night before which is a huge time saver!
Empanada dough:
2 cups all-purpose flour
1/2 cup whole wheat flour
1 teaspoon salt
1/2 Earth balance, cold & cut into cubes
1 egg substitute
1/3 cup ice water
1 tablespoon vinegar
Combine flours and salt in a large bowl and stir. Add earth balance and use your fingers to blend until the mixture resembles coarse crumbs.

In a small bowl, whisk the egg substitute with the ice water and add in the vinegar. Slowly pour into the flour mixture and use a fork to gently incorporate it. Gently knead the dough until it comes together into a ball.

Wrap the dough in plastic wrap, and refrigerate for at least an hour.

For the mushroom filling I used this pretty simple recipe that can easily be changed. If you have herbs such as rosemary or thyme on hand they make a great addition!
2 cups mushrooms, chopped.
2 tablespoons soy sauce
2 tablespoons nutritional yeast
1 teaspoon earth balance
Start by cooking the mushrooms with the soy sauce in a saucepan on medium heat. Once the mushrooms have cooked for about 5-8 minutes you can add the other ingredients. Heat everything together, stirring often. Once everything is well mixed you are ready for the next step!

Roll the dough flat on a floured surface with a rolling pin until it achieves about a 1/8 inch thickness. You can use a cookie cutter to cut the circles or use the top of a pint glass. Once you have the size circles that you would like you can start adding the filling. I did about a tablespoon of the filling for each and it seemed to be a perfect amount. After you have filled them you can fold them over and seal the edges with a fork. Bake at 400 in a preheated oven for 20-25 minutes.
Dusting the tops with earth balance or oil and herbs before baking is recommended!

Soup, salad and bread, oh my!

This was our dinner last night. I wasn't sure how the vegan baguette would turn out since I had to substitute a few ingredients, such as the milk and butter, but it turned out amazing!

Carrot Ginger Soup.
4 cloves garlic, minced.
6-7 large carrots, diced.
Small chunk of fresh ginger, minced.
2 cups veggie broth.
salt, pepper and cilantro for garnish.
Start by cooking the garlic and carrots in a saucepan with oil until the carrots are somewhat soft. Add ginger and continue to cook on a medium heat, stirring occasionally. Turn off heat and let cool before blending in a food processor.
At this point you can do a taste test and see if more ginger is needed. Once you have achieved a smooth texture, return mixture to the saucepan and add veggie broth. After the soup is completely heated through it's ready to serve! Salt, pepper and cilantro make a great garnish for this soup.

Vegan Baguette recipe can be found here. I simply substituted the milk and butter and had great results!

Cucumber Salad: One whole cucumber (I don't peel it because I like the crunch!), handful of cherry tomatoes, tablespoon of balsamic vinegar, a dash of salt and pepper.
Chop up both cucumber and tomato in small chunks.
Mix all ingredients in small salad bowl and refrigerate until chilled.
It's a very basic salad with a great flavor!

If you are in the Seattle area there is a great french restaurant on Capitol Hill that I recently fell in love with. It's called Thomas Street Bistro and is tucked away in the residential area of the hill. It is a small yet comfortable place with amazing vegan options.

This past weekend I made the most amazing vegan cake. Chris loves peanut butter, so I found a great chocolate cake(with a hint of coffee flavor) and chocolate peanut butter frosting recipe. I had fun making these cake toppers as well :)
Here is the recipe. I suggest adding the coffee instead of just water

Today, we celebrate our 6 year anniversary! Chris took the day off so we could spend more time together. We enjoyed vegan donuts and muffins for breakfast and amazing Seattle roasted/brewed coffee. Hot toddy's, lots of reading and playing cards (my grandma would be proud)were also a huge part of our day. Now we are off to a surprise dinner that chris arranged. I can't think of a better way to spend a rainy Seattle day :)

These are just a few of the pictures we got along the way. I loved the covered bridge and the abandoned airplane. The views of the island made for a great bike ride.

This pond was just a short walk from our campsite! It was a great morning walk. We saw frogs, fish, herons and woodpeckers!

These were the most amazing blackberries! I couldn't stop picking them! Yum :)

This part of the ride was pretty exciting :)

While we waited for our ferry home we enjoyed the view, which included a blimp! I hadn't seen one since I was a kid. Starfish where covering the docks, the sun was shining, the beer was cold and it felt like a perfect ending to a great trip!

p.s this is my favorite blog! It's all vegan and makes me so happy whenever I read a new post :)

This past weekend we ventured out to the coast for a short camping trip. It was amazing to say the very least. Here are a few pictures from our weekend.

Aww, I love the beach. This was a place Chris and I had talked about visiting for years. Now, we are already planning to return in the very near future :)

Our hike through the rain forest looked a little something like this. The river was ice cold and I couldn't stop dripping my toes in. It was a beautiful walk through trees that were hundreds of years old and the occasional chipmunk that crossed our path.

These perfectly flat rocks were covering the beach!

We ended our trip at a blueberry farm where we picked some tasty berries. We just haven't decided on just what to do with them yet. My vote is Blueberry pie :)

A few weeks ago I collected some grape leaves from my mom's amazing garden (which I'm pretty jealous of) and made these. They were so tasty!
Another recipe I've been having a lot of fun with is this one.
I've made it into a cinnamon raisin bread by just adding raisins and cinnamon/sugar just before baking. I plan to try turning it into a rosemary and olive bread next!
The above pictures are from my moms garden which is not just filled with great plants like blueberries, lemon verbena, lavender, sunflowers, zucchini and horse radish, but also has great decorations like fake snakes, alligators and a not so pink flamingo that I convinced my mom every garden needs!

We had a great weekend getaway with long walks on the beach, moped rides, homemade vegan cinnamon rolls, bonfires, lazy mornings, bunk beds, bike rides, and sandy shoes. I loved every second of it!
It's been a while since my last post so I have lots of new recipes and pictures to share over the coming weeks! The cinnamon rolls are a recipe that everyone needs!

I was recently given some old tins filled with lace, buttons and the little random things that I love. I have been loving lace lately and was so excited to get a whole tin filled with a variety of colors and designs.

jamaican ginger beer

Just made this today and it is so so tasty! It's very refreshing and fun to make too.

2 1/2 pounds fresh ginger, roughly peeled.
4 cups water, divided
1 cup fresh lime juice (8-10 limes)
2 1/2-3 cups sugar

Start by adding a small portion of the ginger and 2 cups of the water to a blender. Blend for about 2-3 minutes. Pour through a strainer to get all the pulp out. Keep doing this until you have used all the ginger and water. When you have removed all the pulp, add the remaining ingredients and serve over ice. You can also spike this drink (rum works great). It will keep chilled for about 3 weeks.
Can't wait to make this in the summer time!

I started cutting all the fabric pieces for another quilt! I am using scraps of fabric and cutting them into thin scrips (so I can use every inch of the scraps) and once I've sewn them all together I'll start looking for the backing fabric. It get's expensive to find really quality fabric for a queen size quilt so in the past I have purchased a nice sheet and used that instead. I haven't decided what I'll use this time around... but I'll add pictures of the finished quilt in the near future. Also, I started working on a summer time shirt. I have had these pretty white glass buttons sitting on my shelf for a while now and I feel like I finally found a great way to use them! These are just some of the crafty things i'll be working on this week. I'm also making a recipe box out of some wood that I carried all the way home from Costa Rica. At the beginning of our trip I found this wood while on a walk to pick some mangoes one afternoon and instantly wanted to make something with it. I carried it across the country while we continued our 3 month trip and then on our journey home. Basically I am very very excited for this recipe box :) I'm posting some photographs from our weekend as well!

Today we came across a fun book store while exploring the city.I found this book and fell in love with the photographs and all the projects. It's one of those books that you get really inspired by! I've already looked at it about 3 times since I bought it this afternoon :)

Also, i found an sx-70 Polaroid camera at an antique shop for $12. I've already ordered some film from Polapremium . I miss being able to buy polaroid film at any old store... but I am very very excited to test this camera out this weekend on our short trip to Victoria BC. I just hope I get my film in time!

I had been dreaming up this dress for a long time now and just found the perfect fabric for it. It's a very light-weight vintage looking fabric that I found at stitches. It's a good reminder that spring is just around the corner! I also started making cards and booklets with a collection of old photographs that I have. The pictures are amazing and i love simply having them displayed on my desk for inspiration. I love making basic booklets mostly because it gives me an excuse to use my type writer! Pictured above is another book that I made for chris for the holidays that includes some of my favorite moments from over the years.

P.s I have to mention the vegan ravioli that i made today! It turned out great! I found the recipe here
Also, i've been reading a lot of Joe Sacco lately and I'm really enjoying all of his work. I definitely suggest checking him out.

I made this clutch with some pieces of wool fabric that i really love. I added a wooden buckle that was mixed in with a box of buttons that i bought years ago (I love finding marbles and random snaps mixed in with the old button collections!). I've been collecting buttons since I was a kid and over the years have even been inspired to make an entire project just so I can use a simple button. Today I was doing some crafts and found these buttons in my collection. While gathering some for future projects I found buttons made from wood, metal, plastic, fabric, bones, shells and other various materials. These buttons I set aside for my upcoming crafting days.I love the different colors, textures and wear and tear of each of them and can't wait to create projects for them in the upcoming days.

It's been a busy couple of weeks filled with family gatherings, hikes, crafting, baking, canning, brewing, the nutcracker (I love it every time!) reading (I'm currently reading like 3 different zines/books and I'm loving all of them) and relaxing when we find the time. I'll soon be adding pictures and directions for some gifts that I gave for the holidays such as bike hats, quilts, crocheted hats, wool ties, handmade books for loved ones, and also recipes for the numerous jams, beers, wines and breads that we experimented with. Like I said, its been a busy couple of weeks! p.s pictured is a full size quilt that I gave my parents for the holidays! I love the way it turned out :)

It's officially fall and for people in seattle that pretty much means its time to hibernate. I've been busy crafty and spending lots of time in the kitchen making jams, wine, cookies, soups, bread and lots of yummy salads. Here is one salad recipe that we put together and fell in love with.

Ingredients: One bunch of kale sliced into thin strips, 2 carrots grated, 1/2 raisins or cranberries, juice of one lemon,enough olive oil to make a dressing, 1 1/2 grains of your choice (we have used farro, and quinoa)one diced cucumber.

Prepare grains. While grains cook mix together all remaining ingredients. The grains can be mixed into the salad or served underneath.
Its a great colorful salad that is oh so yummy!

Well, its that time of year again. Time to try your best to dodge that cold that is sometimes unavoidable. It's my first cold of the year and I am trying my best to get better. Here is one remedy for sore throats or any general cold that I have found to be very helpful.
Dice up some fresh ginger and add to a mug. Add about a teaspoon of lime/lemon juice, and 1-2 teaspoons of agave or honey. Add hot water and let steep for a few minutes... and then enjoy!

I can't remember when my mom first started making this bread, but I do know that whenever I go home I can smell it baking in the oven before I even open the front door! I remember when I was little it was my job to collect the rosemary from the garden that would soon become the topping for this delicious vegan bread and even though I have had it countless times over the years at family gatherings it has yet to disappoint me. If you decide to try out this recipe I feel I must first warn you... you are sure to run out very quickly and you are sure to get requests for this recipe at any and all future potlucks. You have been warned :)
First start by preheating the oven to 500.
Ingredients:

2 teaspoons salt
2 teaspoons yeast (one package)
2 cups warm water
4 cups flour

Mix all dry ingredients, including yeast. Slowly mix in warm water (you should be able to touch the water without it burning. It cannot be too hot or it will kill the yeast). Cover and let sit in a warm place for atleast 30mins.
After 30 minutes the dough will be slightly sticky. It helps to get your hands wet before attempting to shape the dough. It might need more flour if it feels like it is way to sticky. I added a little flour at a time until I felt like it was the consistency of regular bread doughs.
Once you have achieved the right consistency, shape the dough onto an oiled pan (it is important to make sure you have an oiled pan).
Add toppings

diced rosemary
salt
olive oil

You can kind of play around with the amount of toppings you want. my mom always uses coarse sea salt, but any salt works. Rest on the pan for atleast 15 minutes.
This step is very important! You must now turn the oven down to 400! If the oven is left at 500 it will definitely burn. Bake the bread for 30-35 minutes.
I made this bread the other day with a vegan chili and it was a perfect combo. Really this bread goes well with any dish though! This bread does take sometime to prepare but honestly it is well worth it! Enjoy!

a crafty weekend

I made this scarf from some scraps of fabric that I had gotten a while ago and originally didn't know what to make with it. I fell in love with the deep purple of the fabric and I have a great love for linen as well. I decided to fray the ends and have added a small lable to the backside. I'll be adding a similar scarf to my etsy shop very very soon! It's perfect timing for a nice warm scarf to keep you cozy as the cold rainy seattle weather sets in.
I made this ring with an old button that I had and some beads I've collected over the years. I'm pretty much in love with this ring :)
Each napkin has a different stamp design. I love that these napkins will be used again and again and not simply tossed away after one use. I feel like these add character and warmth to any meal.
I am very excited to start using these napkins! They are going to be perfect along side a nice hot bowl of soup.

a walk around town

It was a perfect day for a walk through the city. It was rainy and cold and probably our first real fall weather day here in seattle. After our walk we returned home to finish making our wine which we had been mashing grapes up for most of the afternoon! It's the first time we've attempted to make wine and in just a few weeks we'll have 15 bottles of hopefully drinkable white wine!
This has to be one of my favorite buildings on the hill. I love the colors! This building is around the corner from a cute little hidden french restaurant that we'll hopefully be visiting soon. It reminded me a a cafe that would be tucked away in an alley in paris. It's the kind of place that you only seem to find when you are lost.

So, my sister made these amazing vegan cupcakes that I am in love with! My niece and I made them last night and they made our whole place smell so great. It's definitely the best vegan recipe that I have come across. I added some peanut butter frosting but seriously these cupcakes taste great with no frosting or simply with some powered sugar sprinkled on top.

Vegan Chocolate cupcakes

3 cups Flour
6 Tablespoon's cocoa powder
2 teaspoon's baking soda
2 cups sugar, (I did 1 1/2 white sugar and a 1/2 brown sugar)
1 teaspoon salt
10 tablespoons vegetable oil
2 tablespoons white vinegar or lemon juice (I used lemon juice)
2 teaspoons vanilla
2 cups cold water

First off preheat your oven to 350. Then, in a big mixing bowl throw in the flour, baking soda, cocoa powder, sugar and salt. Mix it all up with a large spoon. When it is well stirred make a well in the middle of the dry mixture and add the vegetable oil, vanilla extract, white vinegar/lemon juice and the cold water. If you have a mixer then fantastic, otherwise continue to mix with your spoon until the mixture has a smooth consistency Once you have this you are ready to break!

Take your cupcake pan and put the little paper cups in to it. it helps if you grease the paper cups before pouring in the batter. When you’re ready to pour, use a ladle and fill the cups about three quarters of the way and then pop them into the oven and bake about 25 to 30 minutes. Poke the middle cupcake with a toothpick to check that they are done.

I am very excited to have some time this weekend to do some crafting projects that I've been dreaming about. Seriously dreaming about. The other night when I couldn't get to sleep I planned out exactly how I was going to sew the wallet that I'm making for chris. Other projects I have in mind: a shirt made from an old curtain I bought at the thrift store, slippers that I've been trying to make for months, and I plan on finally finishing the quilt that is made entirely from scraps of fabric! It's going to be a great weekend!

I love how our place is coming together. After not having a "home" for so long it feels nice to settle down for a bit. I will admit that I am a bit antsy staying still for any amount of time... but I'm working on that. We started hanging up pictures from our previous trips(Paris, Hungary, Costa Rica, aww... I miss them all!) and filling our selves with books that have inspired us and other books that we have yet to read.
Today we saw Handmade Nation, which I had been anxious to see for the past year. It was exciting to finally see it! Afterward, we ate lunch at Plum which we have decided we will be trying EVERYTHING on their menu. They have such yummy sounding vegan goodies that its just too tough to pick any one thing. We spent some time at pike place this weekend and got flowers to remind us of summer.
Also, we will soon have a new addition to our home! Life is good. :) Did I mention that I now know how to make paper airplanes?

I started putting some items together that I am going to donate to the Green Bean Coffee House in the greenwood neighborhood. All the proceeds will go toward their chosen cause for the month. It's a great nonprofit coffee house that is very cozy and has nightly happenings such as open mic.
Great place to grab some coffee (I like mine dark as the sky on a moonless night... wait... yeah, it sounded so much better when dale cooper said it... hmmm) and settle in with a book.

I just finished making the items for the goodie bags that I'll be dropping off at Sweet Petula in Pioneer Square. I love the way they turned out. The envelops are made from an old San Francisco map and sewn along the edges. I finished them by adding numbered stickers.

aww... Mastatal

Going for a walk through the hills in Mastatal was unlike anything I have ever experienced. I miss waking up to the roosters each morning (Chris, I know feels very differently about the roosters that started most mornings at 4 am) and walking through the hills to get a yummy breakfast which usually included goodies that were grown on the farm and surrounding hill sides. I had never tasted pineapple's and mangoes that were so fresh. One of my favorite things to do was go collect fruit that had fallen and had been left on the open fields or along the less travelled paths throughout the village.
Chris and I learned how to work with bamboo, which is a lot harder than I ever expected... our fence may have looked a little sad in the end but still I am proud of it :)
We got to ride on a motorbike (the three of us twisting and turning on the gravel roads in the dark... it was exciting to say the least!) and I am sure we were great entertainment for the locals.
We left Mastatal only to return a few weeks later when we realized how much we really missed it.
Chris returned with no dreads yet was still referred to as "rasta" by most everyone in town.
My Spanish was nonexistent which made communicating with anyone very entertaining for any local that happened to be lucky enough to witness it.
